วิธีการใช้: เอ็นเอส-มิกซ์ (วัตถุเจือปนอาหาร) (ตราโลโบ) เป็นส่วนผสมของเกลือและโซเดียมไนไทรต์ ช่วยตรึงสีของเนื้อ ปรับปรุงเนื้อสัมผัสและกันเสีย เพียงเทียบส่วนกับเนื้อที่ใช้คือ ใช้ 1.5% ของปริมาณเนื้อ ในสูตร เช่น ทําไส้กรอก หรือโบโลนญา

น้ำหนักรวม 1 กก. จะใช้ 15 กรัม (3 ช้อนชา) เอ็นเอส-มิกซ์ (วัตถุเจือปนอาหาร)
(ตราโลโบ) สามารถใช้สําหรับการทํากุนเชียงและไส้กรอกแห้งหลายชนิด

ท่านสามารถทําแฮม เบคอน ไส้กรอกเนื้อแดงต่าง ๆ โบโลนญา แฮมอกไก่ ได้ที่บ้าน โดยการเตรียมน้ำไบร์น (น้ำเกลือเข้มข้น) เพื่อฉีดแฮม เบคอน แช่ตู้เย็นไว้ 2-3 คืน ควรใช้เนื้อสดใหม่และเย็นจัด ขณะทําควรทําให้เร็วไม่รอจนเนื้ออุ่น ใส่น้ำแข็งเกล็ดได้บ้างหากเนื้อบดที่ทําไส้กรอกหรือโบโลนญาเหนียวข้นเกินไป ส่วนอุณหภูมิขั้นสุดท้ายในการทําสุก ไส้กรอก แฮม และโบโลนญา ใช้น้ำร้อนเพียงควันขึ้น (70°C) อย่าใช้น้ำเดือดเหมือนการต้ม การอบไส้กรอกแห้งใช้เวลาหลายชั่วโมงในเตาอบแบบครัวเรือน โดยใช้อุณหภูมิต่ำมาก (40-50°C) สามารถติดตามชมการสาธิตวิธีทําจาก VDO Clip ใน www.lobo.co.th

Directions: NS-Mix (Food Additive) (Lobo®) is a blend of ordinary salt and Sodium Nitrite. By using at a dosage of 1.5% of the total meat weight (15 grams or 3 teaspoons for 1 kg.), it will fix the colour of the product, enhance texture and serve as an antimicrobial, NS-Mix (Food Additive) (Lobo®) is suitable for making Chinese sausages and most dried sausages like coppa. Ham, bacon, hot dogs and bologna can be made at home by making brine solution and injecting into ham and bacon. Marinate for a few nights in refrigerator with the brine. Remember to buy as fresh and cold meat as possible to begin with. While in the process, make it quick and do not let the meat warm up. Add a little chipped ice if the hot dog or bologna emulsion looks condensed. The cooking method for hot dogs, ham and bologna is in hot water (70°C) not boiling.
